2018 Vino Volta Beneath the Flor Chenin Blanc
Notes from the growers / makers..: The aim of this was was to make something that maintained its fruit qualities and exhibited some ‘fino’ characters. It is low production and unique. High quality chenin blanc from a Gingin vineyard was fermented and then filled to 5-year-old Burgundy barriques on ullage and a yeast ‘flor’ was allowed to develop over the wine. Bright, fresh green apple and preserved lemon, a delicate creamy palate with sea spray and oyster like characters, finishes tight and tart.
