The Fiano comes from Tumblong estate in Gundagai region.
Makes up for 35% of the wine. De-stemmed and naturally fermented on skins and macerated for 31 days. Viognier from Freeman vineyards in Prunevale which is Hilltops GI. De-stemmed and naturally fermented on skins and macerated for 24 days. No fining or filtration. No additives excepts 30ppm SO2 at bottling. Neither of the Vineyards are organic. Drinks like just-ripe green papaya, plenty of tropicana, fresh acid, cleans up nice dry and crunchy.
