2018 Persephone Wines Cabernet Franc
We first met Rachel Signer at Rootstock last year. She was there representing her magazine Terre (now Pipette). She made these wines with Anton Van Klopper at his winery in the Basket Range, using the same vineyards he uses. Notes are form her..: The fruit was absolutely beautiful and perfectly ripe. After the initial maceration, the berries were coming off the stems on their own, and the stems tasted quite green, so I separated them by hand and only pressed the berries. I love the aromas of this wine: ripe black cherries and forest floor. This bottling of Cab Franc is from one 300L barrel of free run juice, siphoned off the fermenting fruit before pressing.
