2018 Minim Yandoit Nebbiolo
Notes from big Tim - he makes the wine:
A new wine from a familiar site… Nebbiolo planted in 1998 by Peter and Malcolm Fyffe on a north facing hillside in the Yandoit Hills. In the winery i played it pretty straight; 100% destemmed and into a open top milk vat and pushed extraction a little further than i normally would with regular pump overs. Post ferment the wine sat on skins for 2 weeks to further build tannins and was pressed, rested and moved to two seasoned puncheons for 11 months. The wine was racked to tank with a small sulphur addition and bottled under cork, with a further 12 months resting in bottle before release.
