From Mauricio’s family vineyard in Yumbel, the País vines are well over 200 years old and there’s just 1.5ha of them. After working as a viticulturist and winemaker for commercial companies Mauricio moved his family south. He purchased an abandoned vineyard on original rootstock and restored the vines as well as the ancient adobe winery. He makes wine in exactly the same way as Chileans have been for centuries now, bringing this unique heritage to a new market. Fruit was picked early and destemmed before a long, cold open ferment in an origianl lagar – ancient foudre made of Raulí, native Chilean Beachwood. Basket-pressed after four weeks and aged in Pipas of Rauli (very large format original storage vessels, somewhere between 100 and 200 years old).
