Pinot Gris from Prunevale, Hilltops region. Fully de-stemmed, natural fermentation on skins. Macerated post fermentation for 36 days. Pressed into old French oak Hogsheads to age for 5 months. Pinot noir from Canberra District. 40% whole bunch natural ferment. 2 weeks post ferment maceration. Pressed into old French oak barriques for 6 months. No fining, no filtration. 55% Pinot Gris, 45% Pinot noir.
