2018 La Grange Aux Belles La Chausée Rouge
A blend of Cabernet Franc and Grolleau.
The grapes are from multiple plots (all organic) and are co-fermented. They do a short carbonic maceration, and draw the juice out daily. The aim here is to enhance the aromas, and at the same time not extract too much. The wine is then pressed off and put back into tank, where it stays until it is bottled in the Spring. In general they use 10-20ppm SO2 at bottling. Nothing else is used in the cellar.
