2018 Domaine Ratte Pinot Noir



All Pinot Noir from vines planted on marl - ideal for an expression of this grape and enhanced by working in biodynamics.
80 to 20 year old vines on various sites in Arbois. Harvested at maturity entirely by hand and destemmed in the vineyard via crible. Natural fermentation with indigenous yeasts and long maceration (3 weeks) without the addition of SO2. Aged in Burgundy barrels with a few being new. No filtration at bottling. Floral with a lifted VA nose. Boysenberry and cherry with a nice grainy structure flowing into that Jura acidity keeping everything fresh.
