2018 Combes What's Beneath
Notes here from Oscar, who makes this Chardonnay..: Same block as my other fruit, Yarra floor Chrinside Park. Vines were planted in the early 1990’s, a mix of clones. Picked on flavour at approximately 12 Baume. Winemaking was simple, footstomped and destemmed (about 2 hours of skin contact) before pressing. Settle in tank over night before being racked to a mix of hogs head and barriques all over 5yrs old. Half went through full malo, half we stopped. Wine then sat on gross lees for 6 months only being topped before being racked and bottled in late October.
