Combes Wines is in its third year of existence. In 2018 They made 9 tonnes. The wines are all single vineyard, dry grown, hand picked and vine age is all in excess of 25 years. Fruit again from Chirnside Park, hand picked. Fruit was then all destemmed into 1 tonne open fermenters and macerated for 11 days. Then pressed off to all old French oak barrique on full lees for 3 months before being racked and seeing the first and only hit of sulphur (25 parts)... Bottled a week later.
