Semillon and Sauvignon Blanc from old volcanic based soils.
They are fermented separately and blended into a stainless steel tank a month prior to bottling. Whole bunches were crushed and pressed after 2–3 days into old oak barrels, where the wine was matured on fine lees for six months.
