The Gamay vines are old, with a density of 10,000 vines/ha, and pruned using the gobelet method. Manual harvesting in small boxes, sorting in the cellar. No input. Semi-carbonic maceration, pressing after 9 days. 11 months maturation in huge 30hl (800 gallons) barrels. Light sulphur at bottling. Unfiltered and unfined.
