2018 AR Paye À La Folie Saint-Amour
Notes on these unbelievable Beaujolais, from the winemaker, via a rough translation...
Soils are covered by dense layer of pebbles from ancient alluvion. The Gamay vines were planted less than 10 years ago, with a density of 7,000 vines/ha. Plants are trained rather high. Soils are tilled. Manual harvesting in small boxes, sorting in the cellar. No imput. Carbonic maceration, pressing after 12 days. 10 months maturation in huge 30hl (800 gallons) barrels. Light sulphur at bottling. Unfiltered and unfined.
