Two nights of oxidation of the juice after the press. Left in big open containers, allows the sediments to sink and fermentation to begin while being closely observed. Six months of fermentation outside in fibreglass, followed by 12 months of fermentation in 15-year-old barriques. Light saltiness and bitterness from the barrique and elegantly oxidative.
