2018 Ajola Bianco Macerato



Notes from one of the growers and makers, Raffa:
This is a field blend of Procanico, Tuscan Malvasia, Verdello, Drupeggio, and Grechetto from a single sandy loam / clay plot. There is a long maceration of 3 weeks until all the sugar is consumed, then it is pressed and aged in a large chestnut barrels for 8 months.
