Oh yeah, the new Xavier's are here... Notes from Xavier himself..: 100% Cabernet Sauvignon, from St Andrews in the Yarra Valley. A mix of clay and old sedimentary soils. Sustainably farmed fruit, currently in conversion to organics. The fruit is harvested by hand and whole bunches are direct pressed to a combination of stainless tanks and old barrels. Rested for 4 months on its lees prior to blending with minimal sulphur (25ppm) at bottling.
