2017 The Hermit Ram Sauvignon Blanc
Winemaker Theo Coles is getting a bit of a reputation as the go to guy in New Zealand for well crafted skin contact. Sourcing different parcels from around North Canterbury and creating things that are different, refreshing but without too much funkiness. The fruit is harvested from a Biogro certified vineyard in the Waipara Valley. The soils are Glasnevin Gravels with silt layers and calcium deposits through out. Hand harvested and destemmed into open top fermenters. Carefully infused (cap washed) until about 2/3 ferment when a single foot plunge is undertaken. Natural ferment and approx. 5 weeks on skins. The freerun and press wines are combined, settled and racked into a mix of stainless and old oak for MLF and maturation. Bottled under crown seal with 20 ppm SO2 added.
