2017 The Hermit Ram Field Blend
Winemaker Theo Coles is getting a bit of a reputation as the go to guy in New Zealand for well crafted skin contact. Sourcing different parcels from around North Canterbury and creating things that are different, refreshing but without too much funkiness. This wine is the result of a single pick from a very old vineyard in the Waipara Valley. The blend is Riesling, Pinot Noir, Gewurztraminer and Cabernet Sauvignon. It is picked on the day the Riesling is perfectly ripe and fermented in the proportions the varieties are grown in the vineyard. The fruit is destemmed and naturally fermented on skins for 6 weeks. Pressed and settled, the wine is put in ancient barrels for a natural MLF. Bottled under Nomacorc with 20 ppm SO2 added.
