2017 Les Dolomies Tout Pete Doucement
Les Dolomies takes its name from the magnesium limestone found in the area.
The iridescent marls and limestone outcrops can be found extensively throughout the vineyards. All wines use wild fermentation with very little sulphur. Made from 2/3 Gamay and 1/3 Chardonnay. The 20 year old Gamay vines are from a small 0.27ha parcel in Brevy. Soil is red marne over limestone. The Gamay is pressed out with no maceration, indigenous yeast fermentation in stainless steel tanks. Flesh of Gamay and complexity of Chardonnay make this a beautiful Pet Nat style wine.
