Winemaker Patrice Béguet, born in the Jura, gave up Paris city life and returned to the Jura countryside with his wife, Caroline Hughes. They purchased heritage vineyards on great terroir, and set up a small winery under their house in Mesnay adopting sustainable viticulture practices and winemaking techniques. Topped up savagnin from 40 year old vines from various vineyards in Mesnay and Pupillin.25% fermentation in cuve and futes, the rest in stainless steel with long fermentation of 6 months and élevage 7 months in futs. Horizontal hydraulic press, indigenous yeast and no sulfites or filtration. Always a very pure expression of savagnin.
