2017 Geyer Wine Co. Seaside Cabernet Franc
Notes from the grower and maker, Dave Geyer..:
Handpicked from a 25 year old single vineyard in Sellicks Hill, within eye-line of the sea, which lends itself to moderating sea breezes during the growing season allowing for a slower more even ripening. The grapes were picked together and split 50/50. One portion was destemmed and wild fermented on skins for 10 days, gently plunged daily. This process adds all of the density of palate, dark berry flavours, green leafiness and complexity you see in Francian versions of this variety. I wanted this for tannin structure, to form a backbone in which to build all the other flavours around. The second portion was on skins for 3 days, pressed and fermented naturally in barrel, forming more fruit forward, smashable and delicious flavours.
