Our favourite Chilean importers are now making wine! Alice and Lucy from Cultivar Vinos, an amazing Chillean wine importer, made some juice in the Adelaide Hills last year. Notes are from them..: A blend of Merlot and Cinsault. The Merlot is organic, from Morialta in the Adelaide Hills. Hand picked by us, foot stomped throughout the day of picking, pressed same day and blended with Cinsault in stainless steel, some stems thrown back in to extract more crunchy tannin/structure. The Cinsault is Biodynamic - from the Smallfry vineyard in the Barossa Valley. Hand picked by us, pressed same day, partially barrel fermented. Co-ferment finished in stainless and then aged in hogshead's - 4 years old.
