I've loved this macerated Sauvignon since François began making it a few years ago and this 2017 offers a beautiful mid point in style between the 2015 and 2016. The fruit is precise and composed, the tannins are long, delicious and refined and the acidity is perfectly harmonious. This cuvée was de-stemmed, fermented in stainless steel and then pressed to barrel for elevage. It was bottled after 10 months and is really a very special wine. This has a delicious expression of fruit with freshness alongside the depth. As such, while I'd recommend enjoying this with food at lunch or dinner you'd also have a pretty outstanding time taking a bottle to the park. This is a pure, precise and thrilling example of sauvignon from this incredible site.
