In the town of Arbois, you will find this small domaine run by husband and wife team Michel-Henri and Françoise Ratte. The Côteaux des Corvées is where you want to grow Trousseau. A sun drenched slope of Eboulis Calcaires over Marne du Lias. 80+ year old vines of the increasingly rare "Trousseau à la Dame" variety which has small, loosely-knit clusters. Harvested by hand and de-stemmed via crible in the vineyard. Natural fermentation with indigenous yeasts and maceration without the addition of SO2. Aged in old Burgundy barrels. No filtration at bottling.
