2017 Domaine de la Cras Bourgogne Rouge



Notes from the importer, Sebastian Crowther MS:
100% Pinot Noir. 33 year old vines are manually harvested with sorting done at the vine. 1/3 of grapes are put whole cluster into wooden tanks without any SO2. Semi carbonic fermentation of the whole clusters with punch-downs. 2/3 of grapes are pressed but not destemmed. 5g/hl SO2 added. Pump-overs and punch-downs. Elevage in barrel for 10-12 months. Light filtering before being bottled.
