A blend of Cabernet Franc and Syrah. Notes from the winemaker..: Fruit is sourced from Denton Vineyard, not only one of the highest points in the Yarra Valley but also one of the only sites on granite soils. These factors contribute several attributes to the wine, perhaps the most notable being good ripening due to the amount of sunlight and higher daytime temperatures than in other parts of the valley, whilst retaining freshness and florals due to cooler night-time temperatures and the granite soils. Again, an earlier picking date was paramount to maintaining acidity and freshness. The Cabernet Franc was de-stemmed and very lightly crushed, with plunging when required to maintain the cap over a seven day maceration. The Syrah underwent Carbonic maceration for four days before pigeage and then spent a further three days on skins. Both pressed off to older French oak until blending at bottling.
