Here, estate grown, organically-farmed pinot noir of Gippsland is sent to bottle at that critical moment when ferment is still kicking along but not too much sugar is left and not too little.
Pale salmon colour. Whiffs of talc, white strawberries, lemon sorbet, faint herbal note.Creamy foam with bristling tang of acidity set below. Barely there strawberry sweetness, then tart. Fills the palate with light foaminess then finishes utterly mouthwatering and faintly, refreshingly saline. It feels vinous yet fine, finessed and is really, really good drinking. I’m in.
