2016 Save Our Souls Sauvignon Blanc
The fruit for this wine comes from Punt Road vineyard in the Yarra Valley.
The vines are 25 years old and planted on the loamy soil of the valley floor. The fruit was hand harvested and then whole bunch pressed in a pneumatic bag press until no more juice could be extracted, in our search for phenolics. The free-run and pressings were combined and no additions made. After 24hrs settling the juice was racked to a large stainless steel tank for fermentation. No cultured yeast was added and no temperature control was maintained. Following primary fermentation the wine was placed in barrique where malolactic fermentation was allowed to occur naturally. The wine was bottled without fining or filtration after 12 months.
