2016 Panevino Girò Tondo
This wine is sort of a dessert/aperitivo/digestivo wine.
Though it is made mostly from Girò, it is not fortified but made in a ripasso style. It is not produced each vintage. "The idea is to use another yeast like bread. This way there is a continuity in my past work as a baker. It's like when Van Gogh cut off his ear and painted himself." Gianfranco recommends this as the last wine to try in the lineup, and something to end the meal on with cheese or on its own.
