Federico Orsi’s biodynamic farm is in a beautiful part of the Colli Bolognese (Bolognesi), just outside Bologna. These hills were known locally for producing great wines for many years, before the local grapes and this humble appellation fell out of favour with drinkers, leading to many leaving their farms to seek jobs in the city. Pignoletto is a grape indigenous to the Colli Euganei. Federico harvests this from young, healthy vines planted over clay and limestone. It is fermented in vat, with a little of the must from the same harvest added to the bottle for the second fermentation. It is aged on its lees and never disgorged. A simple, yet extremely refreshing wine with texture and citrus in spades.
