This wine is comprised of 3 different barrels. Basically the best 3 barrels of red wine from 2016. 2 parts Pinot, 1 part Shiraz. Pinot 1 - Grown by the Hamer family on their small Biodynamic farm in the heart of the Yarra Valley. Pinot 2 - Grown by our good friend Peter who has an even smaller plot of Pinot, also in the Yarra Valley. Syrah - Grown by the Chalmers family in Northern Heathcote on the Mt Camel range without any ‘nasties’ and where the east-facing slope is comprised of red Cambrian soils. All three wines were fermented in stainless and then spent about 7 months each in old Burgundian barrels before being selected and then blended back into stainless where the wine spent another 3 months settling before being bottled by gravity, un-fined and unfiltered with zero adds.
