2016 Maison en Belles Lies Aligoté
After a long professional life in the fashion and garment industry in Paris, Pierre Fenals decided to follow his heart and moved to Burgundy to become a winemaker. The below notes are translated from Pierre's French tasting notes... Harvest is done by hand picking in small crates of 20kg. The grapes are sorted at the pick and at the winery. Direct pressing in a horizontal press without chains, settling at a cold temperature with no sulphur. Maturing in barrels of 350L, with temperatures kept below twenty degrees, no chaptalisation. Maturing for six months on lees, no sulphur. 70% in Inox vats and 30% in barrels of 350L, no “bâtonnage” (stirring). Racking for clarification in springtime, then another eight months of maturing. Blending and no sulphur before bottling, no fining, no filtration, bottled by gravity at the estate.
