2016 Little Ra Ra Petillant No. 1
A parcel of Saignee of Heathcote Nero d’Avola, fermented at a steady 16 degrees under the steam of indigenous yeast.
Racked once, just prior to being bottled via gravity, 17 days post-harvest. No preservative added. In the 4+ years since going to bottle, this wine has developed into something that might sit comfortably in a line-up from Rodenbach Brewery. Undeniably brown in appearance with delicate fizz and a balanced sour acidity that is so beautifully pitched, it rings like a triangle.
