2016 Les Sauvages Chardonnay
As per usual, Mike Bennie's beautiful words are the perfect intro..: Dylan Arvidson worked with Mark Messenger at Juniper Estate and started mucking around with small batches of wine for personal interest. Somewhere in that mix of alchemy, serious winemaking and fun, Les Sauvages was born. Single barrel production, 50% Gin Gin 50% Clone 5 both sourced from Wilyabrup. Wild ferment in new French oak, natural MLF allowed for 2 weeks and bi-weekly battonage. Stone fruit and jasmine flower combine with dried herbs and a touch of salted caramel for great concentration and length.
