Pretty exciting stuff here. This is somewhat of a side project wine that last vintage took the turn to full time wine. It's the project of Tim Stock, a distributor based in Sydney, who is now spending a lot of time in the Adelaide Hills and the Barossa Valley. He's only using organic and biodynamic grapes. The wine is produced in a shed in Basket Range, the winemaking is simple and traditional. All wines are matured on lees in old French oak barrels of varying sizes. Nothing is added except minimal sulphur at racking and/or directly before bottling. Some cuvées have no sulphur additions.
