2016 L’Ostal Obras Completas



Louis and Charlotte Perot are two very lovely people, with two hectares of organic vines and a cool, dark cellar in a limestone cave 30 minutes west of Cahors.
The winemaking is simple and very methodical. Fruit is painstakingly selected, destemmed by hand, fermented slowly and spends it's elevage in an extremely impressive underground limestone cave that Louis has acquired. The cave is impressive but far from flamboyant. Louis and Charlotte have elected to keep their elevage room as earthen as possible. They light the cave only with candlelight having decided that electricity would not be used. Sulphur is never added to the wines and they are not fined or filtered. The wines are dark but very fresh and with low alcohols.
