2016 Konpira Maru Gymkata
We loved last year's, and this one is even better..: Notes from the winemaker..: It is from the Quarry Ridge Vineyard, Kilmore VIC. Very cold site, getting drainage down from Macedon. Was picked on the 16th of April (the last Shiraz we received for the year, Bendigo/Heathcote came in late January, early Feb!) Is hand-picked. Cold-soaked at 6C for 2 weeks, 25% whole bunch. Then wild fermented, went for 2.5 weeks. We ferment with the first racking lees from the semillon to get the glutathione for aroma retention. Then macerated for 14 days post ferment. Malolactic was quicker this year, went through mostly during maceration. All the wines did last vintage. It is then racked and stored in stainless until December. Racked 3 times and bottled by gravity under crown seal. About 15 parts free sulphur at bottling.
