Truly exciting wine from NSW!! Notes from the winemaker..: 100% Chardonnay from Toppers Mountain Vineyard, NSW. A beautiful site in the middle of nowhere that is farmed sustainably. The fruit for the Chardonnay was picked early and left in a cold room over night to retain freshness and keep the temperatures low for processing. 50% of the fruit was crushed and de-stemmed and the 50% was added to a stainless steel tank as whole bunches. After 7 days the wine was basket pressed and transferred back to stainless steel to finish fermentation. The wine then went through malolactic fermentation quite quickly without any racking taking place. It was left to age on full lees for 5 months, with lees stirring taking place for the two month and then left to settle for the remaining 3. One racking took place after this period and then it was bottled directly from tank, unfined and unfiltered. 10 parts free sulphur were added at this time. Some variation in clarity due to this method.
