Notes from Tim Ward, the winemaker:
Coombe Farm, Coldstream, pinot gris hand picked. Whole bunch skin contact wild fermentation, 3 weeks on skins in total, pressed to old barriques for 1 year, then 54L glass demijohns for 2 years.
