2016 Good Intentions Wine Co. Relatively Red
We've had most of these wines before, but this is the first time we've had them all together at once, ready to go. Notes from the main man - Andrew Burchell..: Five eighths Syrah, two eigths Sauvignon, one eighth Semillon, grown on flint rock over Limestone and Volcanic Ash. From the only two rows of Syrah planted in Mt Gambier this rarity for us is carbonically macerated for over a week until maximum deliciousness has been reached then de-stemmed, sat on skins for 24 hours and then pressed straight to stainless steel. Once a barrel of sem/sauv shows us suitable qualities it's poured in, lees and all, and locked down for élevage. After malolactic fermentation finishes in spring it's racked to bottling.
