2016 Good Intentions Wine Co. Gris Diddly Dee!
We've had most of these wines before, but this is the first time we've had them all together at once, ready to go. Notes from the main man - Andrew Burchell..: Pinot Gris grown straight out of flint rock over limestone. Whole bunches were sealed for carbonic maceration bringing in the full flavour (and as a byproduct colour) from the outer pulp of the grapes for a bit over a week (until they tasted delicious). Bunches were then destemmed into open fermenters for about four days on skins with gentle pigeage in the evening. Once through the basket press it went straight to old oak for further fermentation. Racked from barrel at bottling.
