Purveyors of fine grape juice
2015 Joshua Cooper The Springs heathcote, australia

From the Southeren extremity of the region, from granite based soil, washed with ironstone.
Notes from the winemaker, Josh..:
Due to the Southerly location, and the vineyards altitude, ripening occurs much later in the season than is customary for Heathcote, as well as at lower Beaume. This is an area, for me, with amazing potential, and for shiraz perhaps more so than further north in the region. A mix of clones, 20 yo vines. Shiraz on granite - fairly inspired by the Old School greats of the Northern Rhone- and a focus on aromatics, and lighter sort of extraction. Fermented as 100% whole fruit and about a month on skins. All open ferments, not too much physical maceration, just some foot stomping in the later stages. Then 20 months elevage on lees in old Burgundy piece (8 and 9 yo) before bottling.
As with my other releases from 2015 the balanced season shows its hand. Full of exotic herbs and spices, black olive, wafts of smoke, scorched earth, rose and violet and ripe blackberry and black cherry fruit. More fleshy than 2013 or 2014 but with lovely freshness and aromatics. The palate driven by lively acid and silken tannin, more about texture and structure than simple fruit, as is of course my “house style.”
