2015 Domaine Sulauze Super Modeste
Karina and Guillaume Lefevre are behind this pretty amazing juice. He is from Marseille and she is from Brazil. They purchased the winery in Coteaux D’Aix en Provence in 2004, and began immediately to convert the 37 Ha of vineyards into organic viticulture. They are now certified organic, and are also incorporating biodynamic practices into their vineyard work. Embracing the ancestral method of Pétillant Naturel, Guillaume stops the fermentation before all the natural sugar has been eaten up, resulting in extra carbon dioxide produced as the yeast eats the sugar. Wine is closed with a crown cap.
