2015 Chévre Chardonnay
This is an interesting experiment. Jordy Kay has held some wine back, and release it with a bit of age on it. Notes from him..: I picked this very late in the season when it had lovely ripe flavours but the acidity was still super intense. I pressed it straight to old oak for 10 months. Blended and bottled with no sulphur, at all, ever. I'm very proud of this and it reminds me so much of the vineyard. The greatest and worst thing anyone ever said about it was when Philippe Bonard said "Surely this is not Australian."
