2015 Chanterêves Bourgogne Rouge
Chanterêves was founded in 2010 by two super passionate and talented wine people, Tomoko Kuriyama and Guillaume Bott. By day Guillaume is the winemaker at Simon Bize (and Etienne Sauzet before that), while Tomoko balances her Chanterêves life with her work as a contract vigneronne for Chandon de Briailles. A blend of Paris l’Hôpital (75%) on granite in the Hautes Côtes above Maranges (50 year old vines) & Puligny-Montrachet (15%) from chalky soils. 100% whole cluster for the Paris l’Hôpital, and the Puligny grapes are destemmed. Fermentation with indigenous yeasts in a wooden fermenter. 28 days of skin contact. 10 months aging in 228l oak barrels. 100% natural malolactic fermentation. No filteration, no fining. Bottled in August 2016.
