2015 Chanterêves Bourgogne Chardonnay
Chanterêves was founded in 2010 by two super passionate and talented wine people, Tomoko Kuriyama and Guillaume Bott. By day Guillaume is the winemaker at Simon Bize (and Etienne Sauzet before that), while Tomoko balances her Chanterêves life with her work as a contract vigneronne for Chandon de Briailles. Drawn from two small parcels in Maranges. Fermentation and 12 months aging in ten year old 228l oak barrels. Fermentation with indigenous yeasts as well as 100% natural malolactic fermentation. One big batônage in the following summer before the harvest when all the barrels are assembled in a tank. No fining but one light filtration. Bottled in January 2017.
