2014 La Folle Berthe Folles Bulles
David Foubert gave up the office life to move to the Loire and make wine. He leases plots at La Tour Grise, which has been farmed biodynamically for over 20 years. 2014 was his first vintage. Soft pressing of grapes, fermented with indigenous yeasts, no fining or filtration, no dosage and no sulphur added. This is very revitalising. Think lightly bruised apples and clean acid. The bubbles become very light and fluffy, and wash over and refresh the palate. Extremely good value.
