2014 Domaine Gerard Schueller Riesling Particuliere
The domaine, now managed by Bruno Schueller is entirely biodynamic so only organic preparations on the vines, and soils are worked to encourage healthy local micro flora. In the winery they strive to vinify as naturally as possible, included no added sulphur. To do this you need to make the wine as bio-chemically stable as possible. To this end they allow primary fermentation to reduce residual sugar to a minimum, then allow full malo-lactic fermentation for all wines, whites included. Vinification takes place in large, old foudres so oak influence is neutral. The result is wines with tremendous personality and longevity. A little like cider meets wine, this is a high acid number filled with nervous energy and excitement, crunchy apple and citrus notes abound.
