2014 Côme Isambert Grolleau Noir
Grown on schist soils in Saint-Georges-sur-Layon. Fermented in tank in whole bunches, then punched down by foot. Malolactic fermentation, no racking, then pressed in a vertical press slowly before being aged on lees for 6 months – 50% in old wood and 50% in tank. Bottled with a touch of SO2, without filtration.
