2014 Côme Isambert Cosmobulle
Côme is a young winemaker from Saumur, who worked alongside Eric Dubois from Clos Cristal. In 2013 Côme started his own project on the side, buying organic grapes from growers in the area, namely sites in Le Puy-Notre-Dame and Saint-Georges-sur-Layon. 70% Cabernet Franc and 30% Grolleau Noir, grown on schist soils in Saint-Georges-sur-Layon. This is a dark rosé pet-nat. Direct pressing for the Cabernet Franc on a vertical press, saignée for the Grolleau. Disgorged without dosage. No filtration and just a touch of sulfur at bottling. Super dry and palate cleansing. The schist a predominant feature of this crisp and refreshing beverage.
